Pauline & Charles

Our story

On a trip to San Francisco, Charles went looking for the comfort of a really good French crêpe. There wasn't one to be found, and the spark came: what if we brought them here ourselves?

He brought Pauline along on this crazy adventure. Together they trained at a crêpe school and perfected their craft in restaurants.

Diplomas in hand, passion at heart and full of motivation: La Bauloise was born!

About us

Together since 2021, we combine our strengths to build a project that feels like us. We complement each other every day: Charles in the kitchen and creating, Pauline on organization and welcoming you.

Pauline

With a Master's in HR and from a family of caterers, she went along to her father's business meetings just to taste every dish.

Charles

A former pro tennis player and certified coach, he mostly cooked with his family to get out of doing homework!

Behind the name La Bauloise…

Choosing La Bauloise felt obvious: bringing a piece of La Baule, our Breton hometown, along with us. It's a tribute to our family and to the precious legacy of our grandparents, who passed down the perfect gesture and the art of the true Breton crêpe.
